Saganum: Sovinier Gris 2022
It's a dessert wine made from Souvignier Gris (an offspring grape variety of Seyval Blanc and Zähringer). And it's our first wine from Poland! The way this sweet wine achieves its sweetness is pretty interesting too - it's by drying the picked grapes out on mats for 2 months to shrivel and, by doing so, concentrate the sugar. This type of sweet wine goes by the name of 'straw wine'.
There's so much going on in this wine aroma- and flavour wise. First of all, the wine has the residual sugar level of 100 g/L but it's also well balanced by high acidity, adding freshness to it. It contains a plethora of aromas, including: herbal notes, peach, tropical aromas of mango and pineapple as well as lemon peel and honey (from drying the grapes).
It's sublime with desserts, such as cheesecake. However, having it with a Thai mango salad or with a light stir fry is a wonderful experience too.
