Čačík Winery is a small family business run by Zdena Čačíková. Zdena makes wines only from her own, organically certified vines spread across 5 vineyards located in the village of Kobylí. The soils vary from one vineyard to another - from loess, sandy soils to heavy chernozems. Zdena’s viticultural philosophy is to look after the vineyards with respect for nature and to protect their biodiversity. A wide variety of insects, birds and lizards find refuge here thanks to the cover crops and the absence of herbicides. When it comes to viniculture, Zdena’s philosophy is to respect traditional winemaking practices and to limit the interference in the winemaking process to a minimum. The wines are spontaneously fermented with natural yeasts and are not filtered before bottling. Zdena believes that this is the best way to highlight the wine’s personality and create wines that are full of life and unrepeatable.
