How the wine is made

The grapes were hand-harvested into small crates, to avoid crushing. Direct-press of whole bunches, spontaneous fermentation in stainless steel tanks. Bottled under crowncap while still going to finish the fermentation in bottle and keep the natural fizz. Unfined, unfiltered and undisgorged, so a natural sediment is present in the bottle.
