How the wine is made

The grapes are hand-harvested and crushed, then spontaneously fermented on skins in an open vat for 21 days. After pressing, the wine spent 10 months in a 600L acacia barrel and a further 11 months in a stainless steel tank. Unfined, unfiltered.

The wine is made by Zdeněk Vykoukal, a die-hard heavy metal fan whose wines are more like a classic symphony: elegant, intricate, and full of beautiful details. They thrive on the unique limestone soils of Austerlitz, Czech Republic, a small town famous for the formidable Napoleonic battle fought there in 1805.
