How the wine is made

After a short maceration, the grapes are pressed and fermented spontaneously in stainless steel tank. The second fermentation takes place in bottles. Zero dosage added so this wine is brut nature, as dry and pure as it gets.

Fun Fact

Syfany bottles are cellared in a very unusual place – a huge underground concrete cylinder that previously served as a water tank for the former farm where his winery is located. Not only a fun sight (especially for brutalism lovers), but also a super useful storage space providing consistent temperatures and humidity, protection from light and vibration, and natural insulation.
