  • What makes this wine special? It's the definition of charming! Super fresh nose with notes of citrus and elderflower. Mineral, juicy, fruity, with lovely fine bubbles and perfectly integrated acidity that uplifts and extends the whole flavour experience.  Having very little yeast, this wine is definitely a pet-nat you can bring even to pet-nat beginners or more conservative wine drinkers (they'll probably think it's a good sekt and smash it in no time .) 
  • Perfect for: just drinking – enjoying with food – gifting 
  • Pair it with...  aperitif – light fresh cheeses – salads – light vegetable or fish dishes

How the wine is made

The grapes were hand-harvested into small crates, to avoid crushing. Direct-press of whole bunches, spontaneous fermentation in neutral oak. Bottled under crowncap while still going to finish the fermentation in bottle and keep the natural fizz. Unfined, unfiltered and undisgorged, so a natural sediment is present in the bottle.

The winery is named after the small, typically cylindrical plastic insert placed inside the crown cap used to seal the bottle during the secondary fermentation process. The original meaning of bidule is French for "thingamajig" or "gadget".
