How the wine is made

Méthode Traditionnelle (champenoise).

Chardonnay 80%, Pinot Noir 20%

Hand-harvested into small crates, to avoid crushing. Direct-press of whole bunches, spontaneous fermentation in oak barrels for four months, then stainles steel vats. The vin clair was then bottled for "prise de mousse" for more than a year, until its disgorgement – see date on the back label. Unfined, unfiltered, no additions save for minimal sulfur.
