Sylvaner 2021 is a clean-cut, quietly charismatic white from the Herzánovi family in Kobylí—aged for 11 months in old oak to bring out its natural charm without overshadowing its freshness. It’s light on its feet but far from simple: subtly textural, herbaceous, and effortlessly drinkable. Stellar gastronomy wine.

What makes this wine special? Wild-fermented and aged on lees, this Sylvaner was bottled unfined, unfiltered, and without additives. Notes of herbs, pear skin, citrus zest, and a touch of almond. It’s a pure, unfussy wine with excellent balance and lift.

This bottle is perfect for... aperitivo hour – garden lunches – easygoing food pairings that still impress.

Planted in the 1990s and early 2000s, these vines grow on loess soils with varying top layers—some sandier, some richer in humus—giving each plot its own subtle expression.

How the wine is made

Grapes were hand-harvested, gently pressed, and fermented with native yeasts in older oak barrels. The wine aged on fine lees for 12 months, gaining texture and depth. No fining, no filtering, no additives—just careful ageing and quiet balance. Final wine was made as a blend of multiple barrels of different ages and levels of toasting.

Sylvaner used to be one of Czechia’s most planted whites—until after the 1970s it fell out of favor and many old vineyards were ripped out. Herzánovi are helping bring it back, showcasing its elegance and terroir-expressiveness in small-batch, natural wines like this one.
